Meat¶
I used chicken breast cut into relatively large pieces to make sure it gets marinaded thoroughly.
- In a bowl combine the following:
- Red wine that you like.
- Dried basil.
- Dried thyme.
- Dried oregano.
- Dried garlic powder/granules.
- Salt & pepper.
- Put chicken pieces with the marinade in a sealable bag (i.e. Ziploc), let air out and marinade for at least 1 hour.
- Fry in butter and oil until golden brown.
Vegetables¶
- Boil a large pot of water. Salted.
- Add in relatively small florettes of broccoli and cauliflower.
- Boil for 5 minutes and set aside. Do not discard water.
Sauce¶
- Fry crudely cut garlic cloves in butter until golden and somewhat crips.
- Take out garlic and set aside.
- Add flour to butter in the pan to make a roux. Once thickened, add dried thyme.
- Add milk and cooking cream (~70ml & 250ml respectively). Add previously removed garlic back.
- Add:
- Half cube of beef stock.
- 3 crushed berries of allspice.
- 1/2 tsp. nutmeg.
- 1/2 tsp. salt & 1/4 tsp. black pepper.
- Make sure everything is mixed and combined properly.
- Let cook for 5 minutes on small flame.
Pasta¶
- Boil pasta in water used to boil vegetables according to instructions.
- Save 1/4 cup water and discard the rest.
- Add vegetables and sauce.
- Add saved pasta water and mix.
